CARNEVINO's menu is comprised of fresh and inspiring modern Italian cuisine alongside the traditional steakhouse classics we all know and love. Some of our featured favorites are Carne Cruda alla Piemontese (hand-chopped steak tartare in the style of Piemonte), Pappardelle with Porcini Trifolati (wide pasta with perfectly sautéed porcini mushrooms), and Giant Shrimp 'Alla Diavola' (shrimp with a spicy tomato sauce in the style of Calabria). And then there are the steaks—mouth-watering, house-aged beef rubbed with a simple yet luscious combination of sea salt, black pepper and fresh rosemary. The magnificent slightly charred crust is delicious enough to convert even the most devout vegetarian. CARNEVINO also proudly serves Heritage pork brined in cider and salt, organic veal rubbed with sea salt, lemon thyme and porcini powder, and Colorado lamb rubbed with sea salt, lemon zest, and fresh mint.

It's not just about Barolo and Brunello at CARNEVINO—the vino might be a first growth Bordeaux or Grand Cru Burgundy, a meaty Chateauneuf du Pape, a rich McLaren Vale Shiraz, or a cult Cabernet from the Napa Valley. Our selection of fine wines is served in whimsical, oversized, hand-blown Movia crystal stemware that our sommeliers season tableside.
